Three recipes to prepare dinner when you don’t have time

For those who get home after a working day, making dinner can be one more weight of the day. We present three quick and easy options to close the day.

Beyond thinking of a simple sandwich or a simple soup for that time of day, we can pay more attention to this food that is generally relegated, especially because of the importance that breakfast or lunch itself has taken on .

It is also important to consider at dinner to maintain a balance in the nutrient system in the body and to recover forms. A light and healthy dinner will also help your metabolism work better, to even burn fat while you are sleeping , also adding relief to the general digestive process.

Pumpkin cream with cheese cubes

Peel green onion, carrot and potatoes to sauté them in a saucepan with a little olive oil. Once the whole begins to brown, add the peeled and chopped pumpkin (without seeds).

Sauté the whole for a couple of minutes and add white wine. Raise the heat so that the alcohol in the white wine evaporates and cover with poultry stock. Cook over low heat until the vegetables are very tender. Salt, stir and remove from heat. Add the cheeses, crush everything and pass through a Chinese strainer to obtain a very fine cream.

Cut slices of bread into small squares to fry in hot olive oil. Once browned, drain and reserve on absorbent paper to remove excess oil.

Serve the cream in a soup plate, add the fried bread squares and decorate with chopped chives.

Zucchini omelette

Wash the zucchini well, without peeling, and cut them into very small squares. Chop the garlic, onion and parsley and add them, along with the zucchini, in a frying pan with a pinch of oil. Simmer for 15 to 20 minutes until the zucchini is soft.

Remove the zucchini, drain and reserve. Beat the eggs and add the zucchini.

Season to taste and leave to rest for a few minutes. Pour the egg mixture into the same pan in which the zucchini were made. Give the tortilla the desired shape and make it little by little on all sides.

Baguette gratin with cheese, mushrooms and ham

The first thing you should do is cut the baguettes in half and lengthwise, as if you were preparing a sandwich.

Spread each slice of bread with crushed tomato. Next, place the cheese and, finally, the well drained sliced ​​mushrooms and the diced ham.

Drizzle with a few drops of olive oil and put in the oven, preheated to 200ºC, until the cheese is well melted and golden.
